Chicken Three Ways – Inspired by the book Eating on the Run
Get yourself a Rotisserie Chicken or cook a couple of chicken breasts down in the crockpot. Then you have three EASY meals for the week!
Serve shredded chicken with your fave roasted veggies and baked beans. Mix it up some days and serve it over rice, quinoa, etc. Easy peasy!
Take leftover chicken combined with about 1/2 cup BBQ sauce. Put it across a ready made pizza crust and sprinkle with mozzarella cheese. Bake until bubbly. Yum! Serve with side salad or veggies.
Take the final pieces of chicken and add to your fave salad (bagged salads work great here!) Toss in some beans for extra protein (probably running low on chicken) like kidney or chickpeas. Add sliced almonds, walnuts, or feta and drizzle with your fave dressing. DONE. Go real fancy and add some fresh fruit for a side.
